A seal can be used to make an impression on melted wax on a document to authenticate who it's from or to seal it from prying eyes.
A signet ring is nothing more than a seal worn as a ring.
While an envelope seal won't prevent an unauthorized opening, the resultant broken seal will make it obvious to the intended recipient that it was read in transit.
It is one of the starting items for the Noble Background in D&D 5e. Another starting item is a Scroll of Pedigree.
A signet ring may have the family coat-of-arms and/or the family motto.
